"GOOD FOR YOU" RECIPE: SPICY EDAMAME HUMMUS

SPICY EDAMAME HUMMUS
(makes about 1 cup)

1 cup frozen edamame
1/4 cup tahini
2 tablespoons flaxseeds
2 tablespoons lime juice
2 garlic cloves, minced
1 teaspoon wasabi mustard (or less if milder flavor is desired)
Pinch of salt
Pinch of pepper
1 Tablespoon freshly minced cilantro
Water or vegetable stock
2 tablespoons olive oil

Cook the edamame according to package instructions. In a food processor, puree the edamame, tahini, flaxseeds, lime juice, wasabi, salt, pepper, and cilantro. Add enough water or vegetable stock until desired thickness. Drizzle olive oil and mix before serving. It is best served cold.

Comments: Serve with vegetables such as carrots, celery, cucumber, or broccoli.
